The key is, set your collateral to 115% of the value of what you are hauling.
Then, worst case scenario, the goods get there OK. Best case scenario, the hauler gets ganked, fails the contract, and you make some serious ISK.

Wherever the PLEX is, bring it up in your assets tab, right click it and choose 'use remotely'. You can use it to add game time or activate dual character training without being near it.
If someone has placed an abnormally high buy order for a PLEX in a station somewhere, IT'S A TRAP.
I'm not allowed to link killmails in this forum, but I have seen several killmails where 10 or more PLEX were blown up because some idiot decided to undock with them in their cargo.

There are channels I monitor where any ship scanned carrying PLEX gets announced immediately with something along the lines of "hey some idiot is transporting 2 PLEX in a leopard, just left Perimeter heading Amarr way".
You can try and hide the fact that you are carrying PLEX by flying a Blockade Runner or "double wrapping" the consignment or you can make yourself very hard to catch with a Covops frigate or interceptor but as stated above its not really worth the risk.
Adding to this, I have placed PLEX inside trap courier contracts (e.g. a freighter sized parcel with a single PLEX, 90 million units of tritanium, and some random bad deadspace or officer modules) and sent them from hub to hub with extreme collaterals, hoping someone will cargo scan the freighter, see a PLEX and blue/purple modules and organise a gank.
The PLEX attracts attention in a way that a billion ISK worth of any other commodity (say 20000 Photon Microprocessors) just doesn't.

One can use a covert ship, but then you have to hope you don't lag or get disconnected.
I typically set courier contract collateral at value or value + 10%, because that's easy to check and calculate.
Speaking as a ganker, that will be a far higher priority to kill than a freighter carrying 17500 units of Quantum Microprocessor or 150 million units of trit or 33 Enyo hulls, despite each of those being worth about the same as one PLEX.
A combat ship, like a brick tanked Proteus, is much less likely to get cargo scanned and can sometimes defend itself with energy neutralizers.
